The Art of Baking: A Seasonal Spring Cake Recipe Inspired by English Gardens

As spring unfurls its petals and the air begins to hum with life, there is no better time to take inspiration from the garden. Garden-Inspired Spring Cake: Lemon, Thyme & Elderflower

This elegant spring cake recipe is a celebration of seasonal British ingredients, perfect for Easter weekend, a spring garden party, or a quiet afternoon with a pot of Earl Grey in your glasshouse.

Ingredients

For the sponge:


  • 225g unsalted butter, softened

  • 225g golden caster sugar

  • Zest of 2 unwaxed lemons

  • 4 large free-range eggs

  • 225g self-raising flour

  • 1 tbsp fresh lemon thyme leaves (or regular thyme if preferred)

For the drizzle:


  • Juice of 2 lemons

  • 2 tbsp elderflower cordial

  • 100g granulated sugar

For the decoration:


  • A few sprays of lemon thyme

  • Edible flowers (such as violas, primroses, or rose petals — all pesticide-free)

  • Optional: a light dusting of icing sugar

Method

1. Prepare the Cake

Preheat your oven to 170°C (fan). Grease and line a 20cm round cake tin. Cream the butter, sugar, and lemon zest together until pale and fluffy. Beat in the eggs one at a time, then gently fold in the flour and thyme leaves.

2. Bake

Spoon the batter into the tin and bake for 45–50 minutes, or until a skewer inserted into the centre comes out clean. Let it cool slightly in the tin.

3. Make the Drizzle

Mix the lemon juice, elderflower cordial, and sugar until combined. While the cake is still warm, poke small holes with a skewer and pour the drizzle slowly over the top, allowing it to sink in.

4. Decorate

Once completely cooled, top with sprigs of lemon thyme and edible flowers. A dusting of icing sugar adds a soft, romantic finish.
