Ingredients

Makes 10 slices

Banana 3 ripe medium

Plain Flour 200g or 1.5 cups

Blueberries 1 cup

White sugar 2/3 cup or 133 g

Eggs 2

Granola 1 cup or 50g

Salted Butter 1 tbsp

Vanilla Extract 1 tsp

Baking Soda 1/2 tsp

Baking Powder 1 tsp

Cinnamon 1/2 tsp

Nutmeg 1/2 tsp

Allergens:  Gluten, Eggs, Lactose

Method

Preheat the oven to 180 degrees C.

Combine all dry ingredients in a large bowl, whisking thoroughly to ensure an even mixture and to remove any floury clumps. In a separate bowl, mix together all wet ingredients until well combined. Gradually pour the wet mixture into the dry ingredients, stirring gently to achieve a uniform, thick consistency.

Add to the oven and cook for 50 to 60 minutes until cooked all the way through.
