The humble potato. Did you know that per 100g, potatoes contain 30% of your vitamin C RDA, 10% of your vitamin B6 and 421mg of potassium, and 2 grammes of fibre?

Ingredients

Makes 1 portion

Potato 2 medium (200g or 7oz)

Egg 1

Bacon Medallion 2

Cheese 0.3 oz or 10g, cheddar

Garlic Powder 1/4 tsp

Onion Powder 1/4 tsp

Paprika 1/4 tsp

Black Pepper twist

Salt Pinch

Olive Oil 1 tsp

Allergens:  Lactose, Eggs

Method

Fry the bacon medallions and then set them to the side to cool before chopping them up.

Peel and grate the potatoes and place them into the middle of a tea towel. Now you need to squeeze the water out of the potatoes, squeeze hard as there is lots of water.

Next add the potato to a mixing bowl along with the egg, chopped bacon, 1/4 tsp paprika, 1/4 tsp onion powder, 1/4 garlic powder, pepper, salt, and cheese.

To a pan, add the olive oil.

Using your hands, split the mixture and form it into two patties. Add them to the pan and cook on low-medium heat for 3 to 5 minutes on each side.
