Simple Sourdough French Toast

A simple, sweet French Toast recipe. If you want to lower the fat content, simply swap the olive oil for 1 kcal cooking spray. Additionally, if your carbohydrate requirement is higher or lower, add or remove a slice of bread.

Ingredients

Makes 1 portion

Sourdough bread 2 slices

Banana 1 medium-sized banana

Egg 1 chicken egg

Skimmed milk 2 tbsp

Ground Cinnamon 1/4 tsp

Olive Oil 1 tsp

Honey 1/2 tsp drizzled over

Blueberries 1 handful

Allergens:  Lactose, Gluten, Eggs

Method

Get all of your ingredients ready and place them on your countertop.

Grab a bowl and crack an egg into it. Add a splash of milk along with the ground cinnamon. Lightly whisk using a fork. If you like, pour the mixture onto a plate to make soaking the bread easier.

Next, add the olive oil to a pan on low-medium heat. As the pan heats, soak the bread on both sides before adding them to the pan.

Cook for 2 to 3 minutes on each side. If there is any remaining egg mixture, you can pour this over the bread slowly (for the bread to absorb) as it cooks.

Once cooked, place the bread on a plate, drizzle with 1/2 tsp of honey and serve with a handful of blueberries and a chopped banana.
